Fried Fish, Lima Style

Ingredients
- 1 corbina (a white-fleshed South American croaker), or any other fresh fish
- garlic
- onion
- pepper
- oregano
- salt
- 1 spoonful vinegar
- yellow maize flour
- manteca de chancho (pork lard)
Instructions
- Choose a corbina (or any other fresh fish), freshly caught; descale it and wash it in three waters.
- Rub it inside and out with a compound of ground garlic, onion, pepper, oregano and salt moistened with a spoonful of vinegar.
- Leave it in this adobo (seasoning marinade) for two hours.
- Cut it into transverse pieces and dredge them in yellow maize flour.
- Fry in manteca de chancho (pork lard), first over a moderate fire so the fish cooks, then raising the heat so it toasts.
