Fried Fish, Lima Style

Ingredients

Instructions

  1. Choose a corbina (or any other fresh fish), freshly caught; descale it and wash it in three waters.
  2. Rub it inside and out with a compound of ground garlic, onion, pepper, oregano and salt moistened with a spoonful of vinegar.
  3. Leave it in this adobo (seasoning marinade) for two hours.
  4. Cut it into transverse pieces and dredge them in yellow maize flour.
  5. Fry in manteca de chancho (pork lard), first over a moderate fire so the fish cooks, then raising the heat so it toasts.
