Chicken with Oysters

  1. Season the chicken with salt and lemon juice. Heat the manteca (lard) in a pan over low heat and add the chicken, cooking slowly.
  2. When the chicken begins to soften, add the two dozen oysters, the mashed hard-boiled egg yolks, and the flour dissolved in milk. Cook everything together with fine herbs until the chicken is tender.
  3. Strain the sauce and serve the chicken surrounded by the oysters.
