Chicken with Oysters

Ingredients
- 1 chicken
- manteca (lard)
- 2 dozen oysters
- 2 hard-boiled egg yolks
- 1 tablespoon flour
- 1 small glass milk
- fine herbs
- salt
- lemon juice
Instructions
- Season the chicken with salt and lemon juice. Heat the manteca (lard) in a pan over low heat and add the chicken, cooking slowly.
- When the chicken begins to soften, add the two dozen oysters, the mashed hard-boiled egg yolks, and the flour dissolved in milk. Cook everything together with fine herbs until the chicken is tender.
- Strain the sauce and serve the chicken surrounded by the oysters.
