  1. Cut the bread into very small pieces — it should be mostly crumb. Place in a shallow dish with just enough water and salt sprinkled over to dampen it evenly. Stir well with a spoon so the salt and water distribute equally, then let rest overnight.
  2. Shortly before serving, heat the olive oil in a wide pan. Add the crushed garlic cloves and fry until golden, then remove them and discard. Scatter the pimiento (paprika) into the pan, then add the migas. Turn them constantly until they become juicy but still fairly dry.
  3. Alternatively, instead of ground pimiento, use small pieces of jamón (cured ham) and longaniza (Spanish sausage) — these give much better color and flavor.
