Pig's Hands in Sauce

Ingredients

Instructions

  1. In a pot of water, add salt, carrot, parsley, and onion.
  2. Boil the pig's hands in this broth until cooked through.
  3. Remove the hands and set aside the cooking liquid; debone them carefully.
  4. Cut the meat into small pieces.
  5. Coat each piece with flour and dip into beaten egg.
  6. In a saucepan, heat the manteca (lard) over medium heat.
  7. Add a tablespoon of flour to the hot lard and let it toast briefly, stirring constantly.
  8. Pour in a ladle of the reserved caldo (broth) from cooking the hands, stirring to combine and form a smooth sauce.
  9. Add the breaded meat pieces to the sauce and bring to a boil.
  10. Simmer for a short while until everything is heated through and the sauce has come together.
