Chicken in the Manner of La Mancha

Ingredients
- 1 whole chicken
- manteca (lard)
- olive oil
- 1 medium onion
- parsley
- olives
- 2 1/2 medium carrots
- 4 cloves garlic
- 1/4 head cabbage
- 2 medium turnips
- 1 1/2 tablespoons vinegar
- spices
- caldo (broth)
Instructions
- Clean the chicken and season it with adobo (a marinating spice paste).
- Cut it into pieces. Heat manteca and olive oil in a large earthenware pot or heavy skillet over medium heat.
- Fry the chicken pieces on all sides.
- Add the onion, parsley, olives, and carrots.
- Stir and braise for a few minutes.
- Then add the garlic, cabbage, turnips, vinegar, and spices.
- Pour in enough caldo (broth) to cover the vegetables and partly submerge the chicken.
- Reduce the heat to low and simmer gently until the chicken and the vegetables are cooked through, stirring occasionally.
