Chicken in the Manner of La Mancha

Ingredients
- 1 whole chicken
- manteca (lard)
- olive oil
- 1 medium onion
- parsley
- olives
- 2–3 medium carrots
- 3–4 cloves garlic
- 1/4 head cabbage
- 2 medium turnips
- 1–2 tablespoons vinegar
- spices
- as needed caldo (broth)
Instructions
- Clean the chicken and season it with adobo (a marinating spice paste). Cut it into pieces. Heat manteca and olive oil in a large earthenware pot or heavy skillet over medium heat. Brown the chicken pieces on all sides.
- Add the onion, parsley, olives, and carrots. Stir and braise for a few minutes. Then add the garlic, cabbage, turnips, vinegar, and spices. Pour in enough caldo (broth) to cover the vegetables and partly submerge the chicken. Reduce the heat to low and simmer gently until the chicken is tender and the vegetables are cooked through, stirring occasionally.
