Rice Soup (Sopa de Arroz)

Ingredients
- 1 onza rice
- good meat broth
- onions, cut in thin rounds
- tomato
- whole peppercorns
- 1 clove garlic, ground
- 1 pimiento (pepper)
- oregano, chopped
- parsley, chopped
- grasa de chancho (pork lard) or butter
- salt
- fresh cheese, in slivers
- hard-boiled eggs, sliced
- fried sausage (salchicha), sliced
Instructions
- Reckon one ounce of rice per person; wash it in warm water, rubbing well, and cook it slowly in good meat broth.
- Make a sauce of thinly sliced onion rounds, tomato, whole peppercorns, a ground garlic clove, a pimiento, and chopped oregano and parsley, with pork lard (grasa de chancho) or butter and salt.
- When the onion has browned after a boil, add broth from the stockpot and return it to the fire.
- When it begins to boil, add the pre-cooked rice.
- To serve, put slivers of fresh cheese, sliced hard-boiled egg, and slices of fried sausage into the tureen.
