Rice Soup (Sopa de Arroz)

  1. Reckon one ounce of rice per person; wash it in warm water, rubbing well, and cook it slowly in good meat broth.
  2. Make a sauce of thinly sliced onion rounds, tomato, whole peppercorns, a ground garlic clove, a pimiento, and chopped oregano and parsley, with pork lard (grasa de chancho) or butter and salt.
  3. When the onion has browned after a boil, add broth from the stockpot and return it to the fire.
  4. When it begins to boil, add the pre-cooked rice.
  5. To serve, put slivers of fresh cheese, sliced hard-boiled egg, and slices of fried sausage into the tureen.
