Suspiros (Sighs)

Ingredients
- 250 ml milk
- 100 g butter
- 1 lemon, zest
- 25 g sugar
- a pinch salt
- 250 g flour
- 6 eggs
- as needed oil for frying
- as needed sugar for dusting
- as needed cinnamon for dusting
Instructions
- Heat the milk with the butter and grated lemon zest over moderate heat. Add a pinch of salt and the sugar. Once the mixture is boiling, add the flour all at once, stirring very rapidly to form a smooth paste. Remove from heat and allow to cool slightly. Incorporate the eggs one at a time, beating vigorously after each addition.
- In a shallow pan, warm the oil over gentle heat. Once warm, drop small portions of the paste (about the size of walnuts) into the oil. They will turn themselves as they cook. Once golden and puffed, drain them well on absorbent paper.
- Serve dusted with sugar and cinnamon.
