Suspiros (Sighs)

Ingredients
- 250 ml milk
- 100 g butter
- 1 lemon, zest
- 25 g sugar
- 1 pinch salt
- 250 g flour
- 6 eggs
- oil for frying
- sugar for dusting
- cinnamon for dusting
Instructions
- Heat the milk with the butter and grated lemon zest over moderate heat.
- Add a pinch of salt and the sugar.
- Once the mixture is boiling, add the flour all at once, stirring very rapidly to form a smooth paste.
- Remove from heat and allow to cool slightly.
- Incorporate the eggs one at a time, beating vigorously after each addition.
- In a shallow pan, warm the oil over gentle heat.
- Once warm, drop small portions of the paste (about the size of walnuts) into the oil.
- They will turn themselves as they cook.
- Drain them well on absorbent paper.
- Serve dusted with sugar and cinnamon.
