Roast Veal

Ingredients

Instructions

  1. Prepare a stuffing using crushed crackers seasoned with salt, pepper, butter, and a little sage.
  2. Slice an opening in the veal in five or six different places.
  3. Fill each opening with the seasoned cracker stuffing.
  4. Baste the roast with lard or butter when first putting it to cook.
  5. While cooking, baste the roast with the essence that comes from the meat itself.
  6. The roast is done when a fork passes through the meat easily.
  7. Make gravy using flour, prepared in the same manner as directed for other roasts.
