Sweet Pickle Peach

Ingredients
- cling stone peaches
- vinegar
- 5 pounds sugar
- 2 pounds sugar
- 0.5 teacupful whole allspice
- 1 ounce whole cloves
Instructions
- Have your vinegar boiling hot and drop the peaches into it, letting them remain for five minutes.
- Remove the peaches from the hot vinegar and place them in a stone jar.
- Layer the peaches with sugar in the jar: about every six inches of peaches, cover with one inch thick of sugar, alternating layers of peaches and sugar until all peaches are under sugar, using five pounds of sugar to ten pounds of peaches.
- Let the peaches remain under sugar for one day.
- Take the juice that comes out of the peaches and any undissolved sugar, add two pounds more sugar to it, and put on the fire in a porcelain kettle.
- Let the mixture cook to a thick clear syrup.
- Pour the syrup boiling hot over the peaches.
- Take the vinegar the peaches were scalded in and put it to boil a second time.
- While the vinegar is boiling, add one-half teacupful of whole allspice and one ounce of whole cloves.
- Pour the spiced vinegar over the peaches.
- Pour this juice on the peaches for nine mornings alternately.
