To Bake a Shad

Instructions

  1. Prepare a large, fat shad and stuff it with forcemeat. Lay the fish at full length in a pan. Add water, red wine, mushroom catsup, pepper, vinegar, salt, garlic cloves, and whole cloves. Stew gently until the gravy is sufficiently reduced. Use a fish-slice with holes to lift and transfer the fish to the serving dish without breaking it. Thicken the remaining gravy with butter and brown flour mixed together, then pour over the fish.
