A Sweetmeat Pudding

  1. Make a quart of flour into puff paste. When done, divide it into three unequal parts. Roll the largest piece out square and moderately thin. Spread a thin layer of marmalade over it, leaving a margin of about an inch all around. Roll the next largest piece and lay it on top, then cover that with marmalade, again leaving a margin. Roll the smallest piece and place it on top of the others, spreading marmalade over it as well.
  2. Fold the layered paste up, one fold over the other, about the width of your hand. Press the ends together securely and tie the whole thing in a cloth. Place it in a kettle of boiling water where it can lie at length without doubling. Boil it quickly. When done, pour melted butter mixed with sugar and wine over it in the serving dish.
