A Curd Pudding

  1. Heat two quarts of milk until it boils. Pour in half a pint of white wine to curdle the milk, then strain the curds from the whey.
  2. Pound the curds in a mortar together with six ounces of butter, half a pound of loaf sugar, and half a pint of rice flour (or an equivalent amount of crackers beaten as fine as flour). Beat in six eggs that have been made light, and half a grated nutmeg. Beat all the mixture well together.
  3. Bake the pudding in saucers in a moderate oven. Turn them out carefully onto your serving dish. Stick thin slices of citron into the puddings, and pour over them rich melted butter mixed with sugar and wine.
