Mutton Chops

Ingredients
- mutton rack
- 2 large spoonsful boiling water
- 1 spoonful mushroom catsup
- 1 small spoonful butter
- salt
- horse-radish
Instructions
- Cut the rack as you would for harrico. Broil the chops. While they cook, prepare the gravy: combine two large spoonsful of boiling water with one spoonful of mushroom catsup and a small spoonful of butter. Stir until the butter is melted, then season with salt. When the chops are done and plated, pour the gravy over them. Garnish with scraped horse-radish.
