Puff Paste

  1. Sift the flour and set aside a little for rolling the paste. Mix the remainder with cold water into a stiff paste and knead it well. Roll out the paste several times.
  2. Wash the salt from the butter and divide it into four parts. Place one portion on the paste in small bits, fold it up, and continue rolling until the butter is well mixed throughout. Add another portion of butter and roll in the same manner. Repeat this process until all the butter is incorporated into the paste.
  3. Handle the paste very lightly with your hands throughout. Bake in a moderate oven that will permit it to rise without browning it. The finished paste should look white and light as a feather.
