Gooseberry Fool

Ingredients
- 2 quarts green gooseberries
- loaf sugar
- very little water
- rich boiled custard
- frothed cream
Instructions
- Pick the stems and blossoms from the green gooseberries. Put them in a stew pan with their weight in loaf sugar and a very little water.
- Stew until sufficiently soft, then pass the pulp through a sieve.
- When the mixture is cold, add rich boiled custard until it reaches the consistency of thick cream.
- Put the fool into a glass bowl and lay frothed cream on the top.
