Oyster Loaves

Origin: Tidewater Virginia

Source: Mary Randolph, 1824

Ingredients

Instructions

  1. Take little round loaves and cut off the tops. Scrape out all the crumbs from the interior.
  2. Put the oysters into a stew pan along with the crumbs that came out of the loaves, a little water, and a good lump of butter. Stew them together for ten or fifteen minutes.
  3. Stir in a spoonful of good cream. Fill your loaves with this mixture and lay the bit of crust carefully on again.
  4. Set them in the oven to crisp. Three are enough for a side dish.
