Fried Sliced Potatoes

Ingredients
- potatoes
- lard or dripping
- very little salt
Instructions
- Peel large potatoes and slice them about a quarter inch thick, or cut them in shavings by peeling round and round as you would peel a lemon. Dry them thoroughly in a clean cloth.
- Ensure your fat and frying pan are quite clean. Place the fat on a quick fire and watch it carefully. As soon as the lard boils and stills, add the potato slices and keep moving them constantly until they are crisp.
- Remove the potatoes and lay them on a sieve to drain. Sprinkle very little salt over them before serving.
