Fried Sliced Potatoes

Instructions

  1. Peel large potatoes and slice them about a quarter inch thick, or cut them in shavings by peeling round and round as you would peel a lemon. Dry them thoroughly in a clean cloth.
  2. Ensure your fat and frying pan are quite clean. Place the fat on a quick fire and watch it carefully. As soon as the lard boils and stills, add the potato slices and keep moving them constantly until they are crisp.
  3. Remove the potatoes and lay them on a sieve to drain. Sprinkle very little salt over them before serving.
