Oil Mangos

Instructions

  1. Gather melons slightly larger than a goose egg. Place them in a pot and pour boiling salted water (made strong) over them; cover and let sit overnight.
  2. The next day, cut a slit from the stem end to the blossom end. Carefully remove the seeds and return the melons to the brine. Let them remain in the brine for eight days.
  3. Transfer the melons to strong vinegar and leave for a fortnight (14 days).
  4. Wipe the insides with a soft cloth. Stuff them and tie them closed. Pack them in a pot with the slit uppermost. Strew some of the stuffing over each layer. Keep them covered completely with the best vinegar.
