Sauce for Boiled Ducks or Rabbits

Ingredients
- onions
- water
- a little flour
- large piece butter
- a little milk or cream
Instructions
- Peel the onions and boil them in plenty of water. Drain and discard this first water. Return the onions to fresh water and boil them for two hours. Take them up and place them in a colander to drain thoroughly.
- Chop the drained onions on a board. Transfer them to a saucepan, sprinkle a little flour over them, and add a large piece of butter with a little milk or cream. Set the pan over the fire and stir until the butter is melted and the sauce is well combined.
