To Broil a Shad

Instructions

  1. Separate one side of the shad from the back-bone so that it will lie open without being split in two. Wash it clean and dry it thoroughly with a cloth. Sprinkle salt and pepper over it and let it stand until you are ready to broil.
  2. Heat the gridiron and grease it well. Broil the shad nicely, then pour melted butter over it.
