Tarragon or Astragon Vinegar

Ingredients
- 1 quart tarragon leaves
- 3 pints strong vinegar
Instructions
- Pick the tarragon nicely from the stem and let it lie in a dry place for forty-eight hours.
- Put the dried tarragon leaves in a pitcher and add three pints of strong vinegar to one quart of leaves.
- Cover it close and let it stand for a week.
- Strain it, and after it has stood in the pitcher until quite clear, bottle it and cork it closely.
