Ginger Wine

Instructions

  1. Combine water, sugar, and race ginger (washed thoroughly to cleanse it) in a pot. Boil together for one hour, then strain through a sieve.
  2. When the mixture is lukewarm, pour it into a cask with the sliced lemons and beer yeast. Shake the cask well and stop it very tight.
  3. Let it stand for a week to ferment. If it is not clear enough to bottle after this time, allow it to remain in the cask until it becomes clear.
  4. Once clear, bottle the ginger wine. It will be fit to drink in ten days after bottling.
