Another Jūdhāba (Ṣifat Jūdhāb Ukhar)

Instructions

  1. Rub fine semolina well by hand and put it in a tinned copper pot; mix in pounded almonds and pistachios and a little toasted poppyseed.
  2. Pour over an ūqiya of saffroned rosewater and enough syrup to cover; optionally add sugar or dissolved honey.
  3. Hang a fat stuffed chicken above until cooked; lift and serve.
  4. General method for hanging chicken over jawādhib: suspend it in the tannūr, watch it, and when its fat begins to run, place the jūdhāba beneath it.
