Another Jūdhāba (Ṣifat Jūdhāb Ukhar)

Ingredients
- fine semolina
- almonds
- pistachios
- poppyseed
- ūqiya rosewater with saffron
- syrup
- sugar or dissolved honey
- fat stuffed chicken
Instructions
- Rub fine semolina well by hand and put it in a tinned copper pot; mix in pounded almonds and pistachios and a little toasted poppyseed.
- Pour over an ūqiya of saffroned rosewater and enough syrup to cover; optionally add sugar or dissolved honey.
- Hang a fat stuffed chicken above until cooked; lift and serve.
- General method for hanging chicken over jawādhib: suspend it in the tannūr, watch it, and when its fat begins to run, place the jūdhāba beneath it.
