Aqrāṣ Mukarrara (Repeatedly-Coated Fried Walnut Discs)

Ingredients
- semolina flour
- raṭl sugar
- raṭl walnuts
- rosewater
- julep syrup
- sesame oil
Instructions
- Knead semolina flour thin and leave until it ferments.
- Pound a raṭl of sugar and a third of a raṭl of walnuts (jawz) fine; knead firmly with rosewater and julep syrup (jullāb).
- Form into small discs, coat with the fermented dough, and fry in sesame oil.
- Lift out, dip in julep syrup, and roll in pounded sugar; return to the dough and repeat three times.
- Dust with finely pounded perfumed sugar and remove.
