Aqrāṣ Mukallala (Sugar-Glazed Pistachio Discs)

Ingredients
- fine flour
- sugar
- pistachios
- julep syrup
- fine perfumed sugar
Instructions
- Knead fine flour to a medium consistency and leave until it ferments.
- Pound sugar and pistachios fine, knead with julep syrup (jullāb) and perfume; form into small discs and coat with the fermented dough.
- Bake in the oven.
- Sprinkle half a raṭl of sugar into dissolved sugar, stirring until firm; pour into a vessel and dip the discs so the glaze congeals over them.
- Dust with finely pounded perfumed sugar, leave to cool, and use.
