Aqrāṣ Mukallala (Sugar-Glazed Pistachio Discs)

Ingredients

Instructions

  1. Knead fine flour to a medium consistency and leave until it ferments.
  2. Pound sugar and pistachios fine, knead with julep syrup (jullāb) and perfume; form into small discs and coat with the fermented dough.
  3. Bake in the oven.
  4. Sprinkle half a raṭl of sugar into dissolved sugar, stirring until firm; pour into a vessel and dip the discs so the glaze congeals over them.
  5. Dust with finely pounded perfumed sugar, leave to cool, and use.
