Akāriʿ (Tandoor-Cooked Lamb Trotters)

Ingredients

Instructions

  1. Take trotters from a yearling lamb, wash them clean, and put them in a pot covered with water through three changes.
  2. Add a handful of hulled chickpeas, salt to taste, mastic, finely pounded dry coriander and cumin, and pieces of cinnamon.
  3. Set the pot in the tannūr from early night until morning with the mouth covered, then lift out and serve.
