Akāriʿ (Tandoor-Cooked Lamb Trotters)

Ingredients
- yearling lamb trotters
- handful chickpeas
- mastic
- dry coriander
- cumin
- cinnamon
- salt
Instructions
- Take trotters from a yearling lamb, wash them clean, and put them in a pot covered with water through three changes.
- Add a handful of hulled chickpeas, salt to taste, mastic, finely pounded dry coriander and cumin, and pieces of cinnamon.
- Set the pot in the tannūr from early night until morning with the mouth covered, then lift out and serve.
