Rice Milk for a Dessert
Origin: Tidewater Virginia
Source: Mary Randolph, 1824
Ingredients
- 0.5 pint rice
- 1 pint milk
- 2 eggs
- butter
- sugar
- nutmeg
- raspberry marmalade
- wine
Instructions
- Boil half a pint of rice in water until tender. Pour off the water and add a pint of milk with two eggs beaten well, stirred into it. Boil all together for two or three minutes.
- Serve hot with butter, sugar, and nutmeg.
- Alternatively, sweeten the mixture and cool it in moulds, then turn out into a deep dish. Surround with rich milk that has been seasoned with raspberry marmalade stirred and strained into it to keep back the seeds. Or season the milk with wine and sugar instead.
