Polenta

Instructions

  1. Put a large spoonful of butter in a quart of water. In a bowl, wet the corn meal with cold water, add some salt, and stir until quite smooth. When the buttered water is hot, add the corn meal mixture and bring to a boil, stirring continually until done. As soon as you can handle it, form it into a ball and let it stand until quite cold. Slice it thinly.
  2. In a deep dish, lay the polenta slices to cover the bottom. Layer on slices of cheese and bits of butter. Continue alternating layers of polenta, cheese, and butter until the dish is full. Top with thin slices of cheese and butter. Put the dish in a quick oven for twenty or thirty minutes until baked.
