Mixed Bread
Origin: Tidewater Virginia
Source: Mary Randolph, 1824
Ingredients
- 1 teaspoon salt
- 1 tablespoon yeast
- 1 quart flour
- corn meal gruel
Instructions
- Combine the salt and yeast with the quart of flour. Add corn meal gruel gradually until the dough is sufficiently soft. Allow it to rise well. Once risen, transfer to a mould and bake until done.
- Note from the author: indifferent flour will rise much better when made with gruel than with fair water.
