Quire of Paper Pancakes

Ingredients
- 16 eggs
- 1 quart milk
- 1 nutmeg
- 0.5 pound flour
- 1 pound butter, melted
- 1 pound sugar
- 2 gills wine
- butter
- powdered sugar
Instructions
- Beat the sixteen eggs together. Add the quart of milk, nutmeg, flour, melted butter, sugar, and wine, stirring carefully to ensure the flour contains no lumps.
- Butter the pan for the first pancake. Run the batter as thin as possible into the pan. When the pancake is coloured on the bottom, it is done—do not turn it.
- Lay each finished pancake carefully in a serving dish, sprinkling powdered sugar between each layer. Serve hot. This quantity will make four dozen pancakes.
