Rose Brandy
Origin: Tidewater Virginia
Source: Mary Randolph, 1824
Ingredients
- fragrant rose leaves
- French brandy
Instructions
- Gather leaves from fragrant roses, taking care not to bruise them. Fill a pitcher with the rose leaves and cover them completely with French brandy.
- The next day, pour off the brandy and remove the used leaves. Fill the pitcher with fresh rose leaves and return the brandy to it. Repeat this process—replacing the leaves each day while keeping the same brandy—until the brandy is strongly impregnated with rose flavor.
- Once sufficiently infused, bottle the rose brandy and store it. Keep the pitcher closely covered throughout the entire infusion process.
- This preparation is recommended as superior to distilled rose water for flavoring cakes and other dishes.
