To Pickle Radish Pods

  1. Cut the radish pods into nice bunches as soon as they are fully formed, selecting only young and tender ones. Pour boiling salt and water over them, then cover with a thick cloth and pewter plate to keep in the steam. Repeat this steaming treatment every day until the pods turn a good green color. Transfer the steamed pods to cold vinegar along with mace and whole pepper. Mix a small portion of turmeric with a small portion of oil, then stir this mixture into the vinegar to give the pods a more lively green color. Use as a garnish for meats.
