Mint Cordial

Ingredients
- 2 handsful fresh mint
- 1 quart French brandy
- 3 quarts water
- 1 pound loaf sugar
Instructions
- Pick the mint early in the morning while the dew is on it, taking care not to bruise it. Pour some water over it and drain it well.
- Put two handfuls of the mint into a pitcher with a quart of French brandy. Cover and let stand until the next day.
- Carefully remove the mint and add two fresh handfuls of mint. Let this stand until the next day, then remove this mint.
- Repeat this process a third time with fresh mint, removing it after one day.
- To the brandy, add three quarts of water and one pound of powdered loaf sugar. Mix well together.
- When the mixture is perfectly clear, bottle it.
