Mint Cordial

Ingredients

Instructions

  1. Pick the mint early in the morning while the dew is on it, taking care not to bruise it. Pour some water over it and drain it well.
  2. Put two handfuls of the mint into a pitcher with a quart of French brandy. Cover and let stand until the next day.
  3. Carefully remove the mint and add two fresh handfuls of mint. Let this stand until the next day, then remove this mint.
  4. Repeat this process a third time with fresh mint, removing it after one day.
  5. To the brandy, add three quarts of water and one pound of powdered loaf sugar. Mix well together.
  6. When the mixture is perfectly clear, bottle it.
