To Pickle Peppers

Ingredients
- Large bell peppers
- Salt
- Water
- Vinegar
- A little Turmeric
Instructions
- Gather large bell peppers while quite young. Leave the seeds in and the stem on. Cut a slit in one side between the large veins to allow water to penetrate, being careful not to cut through the veins themselves as heat will instantly diffuse through the pod.
- Pour boiling salted water over the peppers and change it every day for three weeks. Keep them closely covered throughout this process.
- After three weeks, check the color. If they have turned a good green, place them in pots and cover them with cold vinegar mixed with a little turmeric. If they are not yet sufficiently green, continue the daily water-changing process until they reach the desired color, then finish as above.
