Omelette Souffle

Ingredients
- 6 eggs
- 4 tablespoons powdered sugar
- lemon peel
- 1/4 pound butter
- powdered sugar
Instructions
- Beat the egg yolks and whites separately until very light. Mix them together, then add the four tablespoons of powdered sugar and a little grated lemon peel.
- Melt a quarter pound of butter in a pan. Pour in the egg mixture and stir until the eggs have absorbed the butter.
- Turn the mixture out onto a plate that has been previously buttered. Sprinkle with powdered sugar.
- Set it in a hot Dutch oven and when it becomes a little brown, serve it up for a dessert.
