To Roast Partridges or Any Small Birds

Ingredients
- Partridges or small birds
- Bacon
- 0.5 loaf Bread
- 1 piece Butter
- Butter, melted
Instructions
- Lard the birds with slips of bacon. Put them on a skewer and tie it to the spit at both ends. Dredge and baste them as they roast for ten minutes.
- While the birds roast, take the grated crumb of half a loaf of bread with a piece of butter the size of a walnut, put it in a stew pan, and shake it over a gentle fire until it is of a light brown color.
- Lay the browned bread mixture between your birds and pour a little melted butter over them.
