To Roast Partridges or Any Small Birds

Ingredients

Instructions

  1. Lard the birds with slips of bacon. Put them on a skewer and tie it to the spit at both ends. Dredge and baste them as they roast for ten minutes.
  2. While the birds roast, take the grated crumb of half a loaf of bread with a piece of butter the size of a walnut, put it in a stew pan, and shake it over a gentle fire until it is of a light brown color.
  3. Lay the browned bread mixture between your birds and pour a little melted butter over them.
