Rice Pudding

Ingredients

Instructions

  1. Boil half a pound of rice in milk until quite tender. Beat the rice well with a wooden spoon to mash the grains. Add three quarters of a pound of sugar, the same amount of melted butter, half a nutmeg, six eggs, a gill of wine, and some grated lemon peel. Line a dish with paste and pour in the mixture. Bake until set.
  2. Alternatively, the pudding may be boiled instead of baked, and served with butter, sugar, and wine.
