Rice Pudding

Ingredients
- 0.5 pound rice
- milk
- 0.75 pound sugar
- 0.75 pound butter
- 0.5 nutmeg
- 6 eggs
- 1 gill wine
- lemon peel
- paste
Instructions
- Boil half a pound of rice in milk until quite tender. Beat the rice well with a wooden spoon to mash the grains. Add three quarters of a pound of sugar, the same amount of melted butter, half a nutmeg, six eggs, a gill of wine, and some grated lemon peel. Line a dish with paste and pour in the mixture. Bake until set.
- Alternatively, the pudding may be boiled instead of baked, and served with butter, sugar, and wine.
