Hare or Rabbit Soup

Ingredients
- 2 hares
- bacon
- 2 onions
- thyme
- parsley
- pepper
- salt
- cloves
- mace
- water
- 1 large spoonful butter
- 1 large spoonful brown flour
- 1 glass red wine
Instructions
- Cut up two hares and place them in a pot with a piece of bacon, two chopped onions, and a bundle each of thyme and parsley. Add pepper, salt, pounded cloves, and mace to taste. Cover with a sufficient quantity of water and stew gently for three hours.
- Remove the bundle of thyme and parsley. Thicken the soup by stirring in a large spoonful of butter and one of brown flour mixed together, along with a glass of red wine. Boil for a few minutes longer.
- Serve with the nicest parts of the hares.
