Hare or Rabbit Soup

Instructions

  1. Cut up two hares and place them in a pot with a piece of bacon, two chopped onions, and a bundle each of thyme and parsley. Add pepper, salt, pounded cloves, and mace to taste. Cover with a sufficient quantity of water and stew gently for three hours.
  2. Remove the bundle of thyme and parsley. Thicken the soup by stirring in a large spoonful of butter and one of brown flour mixed together, along with a glass of red wine. Boil for a few minutes longer.
  3. Serve with the nicest parts of the hares.
