Barley Soup

Ingredients
- 3 gills barley
- 3 quarts water
- onions
- 6 carrots
- 6 turnips
- 4–5 pounds mutton
- lean ham
- pepper
- salt
- tomatoes
Instructions
- Put the barley and water on to boil with a few cut-up onions, six carrots scraped and cut into dice, and an equal quantity of turnips cut small. Boil gently for two hours.
- Then add four or five pounds of the rack or neck of mutton and a few slices of lean ham. Season with pepper and salt. Boil slowly for two hours longer and serve.
- Tomatoes are an excellent addition to this soup.
