Cabbage Pudding

Instructions

  1. Select a fine head of cabbage, not too large. Pour boiling water over it and cover until the outer leaves soften enough that you can carefully turn them back. Remove some of the inner leaves, chop them fine, and mix with rich forcemeat. Place this stuffing inside the cabbage head and fold the outer leaves back over it to confine the filling. Wrap the cabbage in a cloth and tie it securely. Boil until tender. Serve whole on a dish with a little melted butter.
