Instructions

  1. Wash the white race ginger very clean. Pour boiling water on it and let it stand for twenty-four hours. Slice it thin and dry it thoroughly.
  2. Prepare the horse-radish by scraping and drying it. Wash the mustard seed and dry it. Chop the onion.
  3. Pound the mace and nutmeg fine.
  4. Combine all the dried ingredients—the ginger, horse-radish, mustard seed, onion, mace, nutmeg, turmeric, and whole black pepper. Make these ingredients into a paste by mixing them with the quarter pound of mustard and the large cup of sweet oil.
  5. Place a clove of garlic into each mango.
