Stuffing for Forty Melons

Ingredients
- 1 pound white race ginger
- 1 pound horse-radish
- 1 pound mustard seed
- 1 pound onion
- 1 ounce mace
- 1 ounce nutmeg
- 2 ounces turmeric
- 1 handful black pepper
- 0.25 pound mustard
- 1 cup sweet oil
- 1 clove garlic
Instructions
- Wash the white race ginger very clean. Pour boiling water on it and let it stand for twenty-four hours. Slice it thin and dry it thoroughly.
- Prepare the horse-radish by scraping and drying it. Wash the mustard seed and dry it. Chop the onion.
- Pound the mace and nutmeg fine.
- Combine all the dried ingredients—the ginger, horse-radish, mustard seed, onion, mace, nutmeg, turmeric, and whole black pepper. Make these ingredients into a paste by mixing them with the quarter pound of mustard and the large cup of sweet oil.
- Place a clove of garlic into each mango.
