To Dress Lamb's Head and Feet

Instructions

  1. Clean the lamb's head and feet very nicely. Boil them until tender, along with the tongue and heart. Remove the flesh from the head, keeping the eyes intact, and mince the tongue and heart. Split the feet in two.
  2. Combine the feet, head pieces, and minced meats into a pint of good gravy seasoned with pepper, salt, and tomato catsup or ripe tomatoes. Stew until tender. Thicken the gravy.
  3. Slice the liver and broil it. Lay the broiled liver slices over the stew. Garnish with crisp parsley and bits of curled bacon.
