An Excellent Method of Dressing Beef

Instructions

  1. Select a rib roasting piece that has been hanging for ten days to a fortnight. Bone it neatly and rub salt over the meat. Roll it tightly and bind it around with twine.
  2. Place the spit through the inner fold without piercing the flesh. Skewer it well to secure it for roasting.
  3. Roast the beef nicely over the fire. When nearly done, dredge it lightly and froth it to build a crust.
  4. Garnish with scraped horse-radish and serve.
