An Excellent Method of Dressing Beef

Ingredients
- 1 rib roasting piece of beef
- salt
- twine
- scraped horse-radish
Instructions
- Select a rib roasting piece that has been hanging for ten days to a fortnight. Bone it neatly and rub salt over the meat. Roll it tightly and bind it around with twine.
- Place the spit through the inner fold without piercing the flesh. Skewer it well to secure it for roasting.
- Roast the beef nicely over the fire. When nearly done, dredge it lightly and froth it to build a crust.
- Garnish with scraped horse-radish and serve.
