Potatos Mashed

Instructions

  1. Boil the potatoes thoroughly, then drain and dry them perfectly. Pick out every speck and rub them through a colander into a clean stew-pan. To each pound of potatoes, add half an ounce of butter and a tablespoonful of milk. Do not make them too moist. Mix them well together.
  2. If desired, put the potatoes into shapes and touch them over with egg yolk, then brown them very slightly before a slow fire.
