  1. Gather ripe morello cherries and pick them from the stalk. Place them in an earthen pot set inside an iron pot of water. Bring the water to boil, taking care that none of the boiling water enters the cherries. Once the juice is fully extracted, pour it through a bag made of tolerably thick cloth that will allow the juice to pass but retain the pulp.
  2. Sweeten the juice to your taste. When it becomes perfectly clear, put a gill of brandy into each bottle before pouring in the juice. Cover the corks with rosin. Store in a dry, cool place where it will keep all summer. Serve mixed with water.
