Apple Fritters

Ingredients
- apples
- 1 glass brandy
- white wine
- 0.25 pound sugar
- cinnamon
- 1 lemon rind
- 2 eggs
- 0.25 pound flour
- 1 tablespoon butter
- cold water
- sugar
Instructions
- Pare the apples and cut them into thin slices. Place them in a bowl with a glass of brandy, white wine, a quarter pound of pounded sugar, finely powdered cinnamon, and grated lemon rind. Let them stand for some time, turning them over frequently.
- Beat two eggs very light. Add a quarter pound of flour, a tablespoon of melted butter, and enough cold water to make a thin batter. Mix well.
- Drip the apple slices on a sieve to drain them. Mix the drained apples with the batter, taking one slice with a spoonful of batter for each fritter.
- Fry the fritters quickly until light brown. Drain them well on paper or cloth. Place in a dish, sprinkle sugar over each fritter, and glaze them nicely.
