Ragout of French Beans

Ingredients

Instructions

  1. Let them be young and fresh gathered.
  2. String them, and cut them in long thin slices.
  3. Throw them in boiling water for fifteen minutes.
  4. Have ready some well seasoned brown gravy.
  5. Drain the water from the beans, put them in the gravy, and stew them a few minutes.
  6. Serve them garnished with forcemeat balls; there must not be gravy enough to float the beans.
