To Boil Sturgeon

  1. Scrape the sturgeon skin nicely and remove the gristle. Rub the fish with salt and let it rest for an hour. Place the sturgeon in cold water with salt and a few cloves of garlic. Before putting it into the water, dredge it with flour. Boil carefully, skimming the surface regularly. When cooked and dished, pour over it a sauce made from melted butter mixed with chopped parsley, a large spoonful of mushroom catsup, one spoonful of lemon pickle, and one spoonful of pepper vinegar. Send some of the sauce to table in a sauce boat separately.
