Roast a Shad

Ingredients

Instructions

  1. Fill the cavity of the shad with good forcemeat. Sew it closed and tie it securely to a board of appropriate size.
  2. Cover the fish with bread crumbs mixed with salt and pepper. Set it before the fire to roast.
  3. When one side is sufficiently roasted, turn the fish over, tie it again to secure it, and continue roasting until fully cooked.
  4. Pull out the thread and serve with melted butter and fresh parsley poured over the top.
