To Fry Perch

Instructions

  1. Clean the fish nicely without removing the roes. Dry them thoroughly on a cloth. Lay them separately on a board and sprinkle with salt, then dredge with flour on one side. When that side is dry, turn the fish, sprinkle salt on the other side, and dredge with flour again.
  2. Ensure the lard is boiling hot before placing the fish in it. Fry with great care. The fish should be a yellowish brown color when done.
  3. Serve with melted butter or anchovy sauce in a boat (gravy boat).
